Apple cider’s flavor reaches a higher level when
reduced, making it a perfect choice for making syrup and sauces. A 20- 30 minute investment in your time yields
perfect “homemade gourmet” treats.
This recipe for Apple Cider Sauce is wonderful
served hot or cold on such goodies as pancakes, waffles, French Toast, yellow
cake, and ice cream. How about winter squash (one of my favorite winter veggies)?

Apple Cider Sauce
2 cups apple cider
2 teaspoons cornstarch
4 teaspoons water
1 tablespoon butter
½- 1 teaspoon of apple pie spice or cinnamon, to
taste (optional)
Boil cider in a small heavy saucepan on high heat
until reduced to one cup…stirring often. This takes about 15 minutes.
Mix cornstarch, water, and spices if using in a
small bowl or glass measuring cup.
Add cornstarch mixture to the cider.
Stir for about one minute, or until cider is
thickened to your liking.
At the very end, swirl in the butter.
