Who We Are



The past few years, the area where I live, Crawford County, Ohio, has seen a wonderful explosion of younger families who are embracing the joys and challenges of living off the land. Because of them, amazing things are happening which have been embraced by our community. Farmer’s markets have been created and on-farm stores have opened. Families dedicated to growing organic produce and naturally raised meats are meeting the public’s needs for locally raised foods. And at the heart of this movement are the women.



Ohio Country Journal is my attempt to share the essence of farm life, focusing on, but not limited to, women. My goal is to bring you into our circle of friendship by inviting you to share your stories and experiences with us. You don’t have to be a full time country woman to benefit from joining us; you just have to be you.





The full-time country women featured in Ohio Country Journal are an inspiration to anyone who dares to follow her dreams, whether it is to live in the country or to bring the country life-style to their urban neighborhoods.

Green Eggs and Reuben



Happy St. Patrick's Day!

Today I have a rare day "just for me". I plan to spend it "free ranging" the countryside with my camera. The sky is whitish-grey and overall the day is gloomy, but I won't let that stop me. Photography is my favorite hobby, and a day spent taking bad pictures (for me) is better than a day of, say...housework {smiles}.

If I had family and/or friends around today, I'd probably be making Reuben Sandwiches because they are the fastest, easiest "Irish" food to make. And if I were ambitious, I might even try Green Eggs and Ham.

But I'm not.

But...you might be.

So, in case you are, here is a recipe from the blog "100 Days of Real Food".  I like this blog and will visit it often.

So, whether you eat them on a plane,
in a car or on a train,
With your dog
Or with a frog
In a field of four-leafed clovers
or listening to the song of plovers,
Pretend to be with Sam I Am
And serve up Lisa's Green Eggs and Ham

 
Marcheta's Reuben Sandwiches
 
For four sandwiches you need:
 butter
8 slices of rye bread
1 lb. of deli corned beef, sliced thin
4 (or more) slices of Swiss Cheese (optional...I don't usually add cheese)
1 C. sauerkraut, drained
1/2 C. Thousand Island dressing
 
 
Assemble the sandwiches:
 
 
Place one slice of bread on a work surface and add Thousand Island dressing.
 
Place 1/4 of the deli Corned Beef on the bread
 
Place 1/4 of the sauerkraut on the beef
 
If you want cheese, add 1 or 2 slices
 
Put Thousand Island dressing on the inside of another slice of bead and place on top.
 
Put some butter to grill pan or large skillet, when butter is melted, add the sandwiches and grill. After about 10 minutes, check the underside to see if it is toasted as you like it. When it is as brown as you like, remove from pan, add a bit more butter, and grill the other side of the sandwich.
 
You may have to do this 2 sandwiches at a time. Grill until both sandwiches are toasted and cheese is melted if you added it.
 
Serve with a pickle and a side of chips for quick and easy...if you have more time, well...mashed potatoes would be like heaven!
